Tea Recipe: Sweet Tea Sorbetto

On a hot day, how do you keep yourself cool in the oppressive heat?  The right (and healthy way to do it) is this: Sweet tea.

But today’s recipe is a twist on the ordinary classic Sweet tea. We turn it into a chilly treat that is both sweet and light, perfect for an after-meal nibble.

Here’s the recipe:

Tea Recipe: Sweet Tea Sorbetto

2 cups sugar

1 cup water

3 cups NYC Breakfast tea, or Aussie Breakfast tea at room temperature

Fresh lemon juice

Procedure: 

1. Combine the sugar and water in a saucepan. Bring to a boil over high heat, then reduce the heat and simmer, wait until the sugar is completely dissolved.  Stop before the syrup changes colour.

2. Remove from the heat and let cool.

3. Brew black tea, then put it into a nonreactive bowl or pitcher. Stir in the cooled sugar syrup. Add a bit of lemon juice to taste, just until the mixture doesn’t taste quite as sweet.

4. Chill the mixture, then put in an ice cream machine, following the manufacturer’s instructions.

(optional: for an extra-intoxicating dimension of flavour, pour a shot of limoncello over a scoop when serving)
